
Everyone loves lasagna—at least in my house, it's one of our favorites! It brings back my best childhood memories, so I had to make one that’s just as yummy as my mum used to make, but as healthy as possible.
So ta-da! Here you have the best, yummiest lasagna in a healthier version.
This recipe uses the Thermomix.
Ingredients:
Filling:
- 500g grass-fed mince
- 1 can organic lentils (rinse to remove extra salt)
- 30g olive oil
- 2 carrots, chopped
- 1 small red capsicum
- 1 medium broccoli, chopped
- 1 onion or onion powder
- 1 garlic clove or garlic powder
- 2 cans chopped tomatoes (read the ingrediengs!!)
- 1 tbsp grass-fed liver powder (you can also use shredded frozen liver)
- Herbs
- Salt
Bechamel Sauce:
- 40g butter or olive oil for a dairy free version
- 40g flour
- 500g bone broth
- 1 tsp nutmeg
(I don’t add extra salt because bone broth usually contains enough salt.)
Instructions:
Filling:
1. Chop all the veggies and place them in the Thermomix. Blend for 6 sec/speed 5.
2. Add the washed lentils and blend for 15 sec/speed 5-7-10. Check if everything is well-blended (it should look like a puree). If not, blend for an extra 5 sec/speed 10.
3. Add olive oil to the mixture and cook for 5 mins/100°C/speed 1.
4. Add the mince, salt, herbs, and chopped tomatoes. Cook for 15 mins/100°C/speed 1.
5. In a rectangular ovenproof dish (approx. 35cm x 22cm), spread a bit of the mixture over the bottom, then add a layer of lasagna sheets. Repeat this step two more times, creating three layers of meat and ending with a layer of bechamel sauce on top.
6.Turn on the oven, 180°.
Bechamel Sauce:
1. Using a clean Thermomix bowl, add all the bechamel sauce ingredients and mix for 7 mins/90°C/speed 4.
2. When ready, spread the bechamel sauce over the top of the lasagna, adding some extra Parmesan cheese if desired.
3. Place it in the oven and bake for about 35 minutes, until the lasagna sheets are cooked and the top is golden brown.
Serve with a nice salad and enjoy!
